Awesome review of what a “Regional Bistro” is!

“A bistro is a small restaurant serving moderately-priced simple meals in a modest setting. The concept developed in Paris, France. Bistros are defined mostly by the foods they serve. Slow-cooked foods like braisedmeats are typical.”

Based on the basic premise of a bistro, an upscale, regional bistro, such as Lobdell’s, A Teaching Restaurant, located in the Great Lakes Culinary Institute at Northwestern Michigan College, would provide a more locally succinct dining experience.  An upscale, regional bistro is a smaller restaurant that offers upscale, casual dining, with lighter fare, smaller portions, and a menu that utilizes many locally available food sources of the region. Seasonality plays a part in this region, as the winter snows and freezing temperatures dictate availability of local produce.
